Keto-Friendly Cauliflower Fried Rice

Keto-Friendly Cauliflower Fried Rice Ingredients:

  • 1 medium head of cauliflower

  • 2 tablespoons sesame oil

  • 2 cloves garlic, minced

  • 1 small onion, diced

  • 1 cup diced carrots

  • 1/2 cup diced bell peppers (any color)

  • 1/2 cup frozen peas

  • 2 tablespoons tamari sauce (or soy sauce if not gluten-free)

  • 2 tablespoons rice vinegar

  • 2 large eggs, lightly beaten

  • Salt and pepper to taste

  • Optional toppings: sliced green onions, sesame seeds


Directions:

  1. Cut the cauliflower into florets and pulse in a food processor until it is roughly the size of rice. You may need to do this in batches.

  2. Heat the sesame oil in a large skillet over medium-high heat. Add the garlic and onion and cook until the onion is translucent, about 3 minutes.

  3. Add the diced carrots and bell peppers to the skillet and cook for an additional 5-7 minutes, until the vegetables are tender.

  4. Stir in the cauliflower rice and frozen peas, and cook for 3-4 minutes, until the cauliflower is tender.

  5. Push the cauliflower mixture to the side of the skillet, and pour the beaten eggs into the cleared space. Scramble the eggs until they are cooked through, and then mix them into the cauliflower mixture.

  6. Add the tamari sauce and rice vinegar to the skillet, and stir everything together. Cook for an additional 1-2 minutes, until everything is heated through.

  7. Season with salt and pepper to taste.

  8. Serve the Keto-Friendly Cauliflower Fried Rice hot, topped with sliced green onions and sesame seeds if desired.
